FOOD & ENTERTAINING
By royal approval
- Giant bourbon biscuits Rather like giant dominoes, these sandwich biscuits with a rich chocolate filling are a British classic loved by all
- Lemon and thyme cake Made with yogurt and olive oil, this is incredibly light and moist. It is drenched in an aromatic, thyme-infused lemon syrup
- Rhubarb and white chocolate tartlets In this recipe, thin, crisp, golden filo pastry shells are filled with unctuous white-chocolate vanilla mousse and topped with tart rhubarb
- Strawberry bunting cake There is no cake more regal. It was originally made for Queen Victoria, during whose incredible 63-year reign the tradition of afternoon tea evolved
Squeeze in the sunshine
- Asparagus & gruyere tartlets These are so quick to make, especially if you buy ready-rolled pastry.
- Courgette, chickpea & feta salad Delicious warm as a light dinner or at room temperature when on a picnic.
- Grilled aubergine sandwiches with caper, olive & herb salsa Silky soft marinated aubergines are one of my favourite things - that and salsa verde, which this salsa is a variation of.
- Roasted squash & onion frittata Squash, red onion and coriander is one of my favourite flavour combinations.
Shared pleasures
- Griddled monkfish This came about by clearing the fridge and using up the last of the jar of harissa. Perfect to cook on a smoking-hot griddle pan or barbecue.
- Roasted pork belly This is a recipe inspired by Valentine Warner, a very good chef and food writer and a friend who I adore.
- Crab salad This salad could be either a great starter or a fantastic main event with bowls of fries. You could replace the baby gem with chicory or kohlrabi
- Barbecued rib-eye steak with tomato salad This is a dish I've used at all our street parties. It's an easy barbecue recipe and an all-time favourite.
